I haven’t posted on here for a while. As many of you know, we added another little man to our family, Jacob, born on the 8th December last year. We already have a gorgeous 3.5 year old boy, Brodie, but boy oh boy, do they keep me busy!
I have been taking snaps of food that I’ve made but honestly, I just have not had the time to write up new recipes or even post! The first time I get to actually sit down is at the end of the day at 8 or 9 pm, by then I am beyond exhausted and usually have washing to fold or something! BUT! The days are getting ‘easier’ and I use the word ‘ easier’ quiet loosely haha as every day is different.
This dish is absolutely delicious! Simple, quick and leftovers are equally delicious the next day.
Basil Pesto Pasta with Roasted Cherry Tomatoes
There’s really no recipe for this. It’s a matter of cooking the pasta of your choice, mixing in the Basil Pesto (you may have some leftover) and roasting some cherry tomatoes till blistered, sweet and juicey! Super simple and super delicious!
