A super easy and delicious soup that the whole family will enjoy!
Serve these with the yummy Spinach and Cheese Rolls for a satisfying and delicious dinner.
1 large onion, diced
2 celery sticks, diced
2 carrots, peeled and diced
1 zucchini, diced
3/4 cup dried green lentils, rinsed
1 tin cannellini beans, drained and rinsed
3 garlic cloves, peeled and diced
1.5- 2 litres of water or stock (I used water + stock cubes)
salt and pepper
1. Over medium heat, cook the celery, carrot, onion, garlic until the onion is soft about 5 minutes or so (do not brown, add salt if it starts to brown).
2. Add in the lentils and stock or water and bring to the boil. Reduce the heat to a simmer and after 10 minutes add in the zucchini.
3. Cook for a further 10 minutes or until the lentils are cooked. Add in the beans in the last couple of minutes just to heat through. Season with salt and pepper and serve hot! Enjoy!by
