I am really loving Nigella Lawson at the moment. I am in the process of purchasing all her new addition books $$ :) I have her DVD Nigella Feast and I LOVE IT! This recipe is on there and I love peanuts, chocolate and granola – win win! I also made muffins using this granola which was delicious!
This makes a big batch but I am sure it won’t last that long :)
1/4 good quality cocoa or cacao
4 & 1/2 cups rolled oates
1 cup sunflower seeds
3/4 cup sesame seeds
3/4 cup apple sauce or compote
2 tsp ground cinnamon
1/3 cup rice malt syrup
1/4 runny honey or maple syrup
3/4 cup light brown sugar
2 cups unsalted peanuts
1 tsp salt
2 tbsp olive oil
1. Preheat over to 160°.
2. Mix all ingredients in a bowl and spread over two small CLEAN trays or one large CLEAN tray (no need to line with baking paper). Bake for 40 minutes to 1 hour, turning once or twice during cooking time. Allow to cool and keep in an airtight container. (The granola will be chunky and crunchy) YUM! Enjoy! :)
Some of this batch can be made into muffins, I made theme (no picture sorry) and they are great as a snack.
225 g plain flour
1 teaspoon bicarbonate of soda
1/4 teaspoon salt
250ml (1 cup) buttermilk
3/4 cup light brown soft sugar
80 ml olive oil
2 cups granola
1. Preheat oven to 200°. Line a 12-cup muffin pan with baking cup or baking paper.
In a large bowl combine the flour, bicarb and salt.
In a small bowl whisk together the buttermilk, egg, sugar and oil.
Pour liquid mixture into dry mixture and stir just until combined; do not over mix.
2. Add granola and stir just until blended.
3. Divide the mixture evenly in the muffin cups. Bake for 20-25 minutes until risen, golden and cooked through (test with a skewer). Remove muffins and allow to cool on a rack. Enjoy!by
