Anything Indian spiced..I love. With more and more cooler days coming our way, we need to have something warm and comforting. This is it. This soup is delicious, creamy and rich. Perfect for dinner or leftovers for lunch the next day.
1 brown onion, finely chopped
2 garlic cloves, rushed
1 tbsp ginger, finely grated
2 tsp ground cumin
1 tsp ground coriander
1 tsp garam masala
1/2 tsp ground tumeric
1 large head cauliflower, cut into florets
1 large potato, peeled, chopped into chunkys
4 cups vegetable or chicken stock
400ml coconut milk, reserving a few tablespoons for garnish
spring onion or coriander, thinly sliced to garnish
1. Heat a little oil in a large pot over medium heat. Cook the onion and garlic, stirring until the onion is soft. Add cumin, coriander, garam masala, tumeric and ginger. Cook, stirring for 1 minute or until fragrant.
2. Add cauliflower, potato and stock. Stir and bring to the boil, then reduce heat and cook, stirring occassionally, for 2o minutes or until the cauliflower and potatos are cooked.
3. Remove from heat and let it cool for 1o minutes. Blend with a stick blender until smooth and season to taste. Add coconut milk and stir to combine. Serve into bowls and garnish with reserved coconut milk, spring onion and drizzle a little olive oil on top – Enjoy!by
